I would also like, when a user clicks on a level 1 category (/places/attractions/) they will then see the level 2 categories of the parent category.

You can however use some other widget like this one https://wordpress.org/plugins/list-custom-taxonomy-widget/
It will let you choose what custom category to show and will include child categories
