On your demo site I noticed the option of a dropdown menu for categories in the “Customizse my Search” menu of the CPT “Hotels”.

If you choose hotels in the dropdown menu below the grey ribbon/map and then click on the button “Custimize my Search” you will get extra options to search for hotels like Pet Friendly and Distance, but also choose from a dropdown menu the diffrent categories (4 starts, 5 starts, 3 stars etc) in the CPT “Hotels”.

How can I do this?
I can’t find any category dropdown fields in the Advanced Search tab in the CPT Settings Menu.
