I’d like to change “Places” and “Place” everywhere on the front end to “Resources” and “Resource” – is there a way I can do that in the theme backend?

I think you can do this at the backend. Go to GeoDirectory, Custom Post Types and edit it. See attached screenshot.

Yes, you need custom post type addon, you cannot change it in the free version.
