the size can vary, the default Google Maps icons are 20px X 34px

The best thing is to keep that ratio.

You can only upload Jpeg or Png files.

I am having trouble creating new categories and also the new icons are not showing which I have uploaded, please see http://www.hoodirectory.com. I have watched most of the videos but I am unable to find one that explains step by step? I am not sure what is supposed to appear in Count or slug? Do you have a guide on this and also the difference between the categories in posts and the categories in places?

There are only two listings (set as draft) but without (at least) a category set.
You can choose the category when adding the listing, there is a dropdown.

If you want to submit listing outside your default city, you need the MultiLocation addon (available here https://wpgeodirectory.com/addons/multilocation/ )
