if you have custom post type installed, you can change Places to whatever you like in GD >> Custom post types.

In our demo I changed places to attractions.

As you can see it changed everywhere (in the breadcrumb, the menus of the dashboard, in the title after selecting a category).

Can you please provide a link and wp admin credentials in a private reply to check your dashboard and see why this is not working?

Your french translation of GD appears to be complete for 29% of strings. It is highly possible that you are missing something there.
