Here is my problem/s:

We have four custom post types, Each one represents a type of member for our association. Three of the member types only have to fill in the typical 10 or 12 fields, just like your basic ADD Listing example. The fourth type is much different and that profile has over 30 different fields to fill out.

1. Due to the difference in the amount of fields in the different post-types, how am I going to make them look balanced when viewing them.If each post-type is just shown alone I’m fine, but if I show a category list
or do a sort, all different post types get mixed on the same page.

2. Even though we have 30 fields that we want the new member to fill out, and we want to be able to sort on most of those fields, is there a way
to just show what we think are the critical fields when it’s displayed on the listing page, but show all the fields in the detail page?

The goal is have a clean look yet still offer a very robust profile for the public and other members too see.

Just go to GD > your custom post settings > choose the field and play with the different show settings.
You should organise your fields under a field set too.
Depending on your choices, you can add some of the fields in the sidebar, some as an extra tab etc.

To add/remove a custom field to the More Info tab: set Show On Detail Page to yes/no
To add/remove a custom field to the Sidebar: set Show In Sidebar to yes/no
To add/remove a custom field to Listings pages: set Show On Listing Page to yes/no

You can have any combination you like.
