I don’t want to delete/remove a listing. I want to leave it intact with the history of reviews, etc.

Have I overlooked the option for this?

there is no option for this.

If you don’t want to put it in draft or delete it, you should probably add a note in the profile and maybe in the Time field to say that the business is closed/out of business.
