My question is, if the package they “buy” allows them to add their listing to 3 categories and the categories they want to add the listing to are in different CPTs, will this total out to the 3 categories they can add listing to and they cannot add anymore, or only count the categories in the first CPT they add to? Or? Does this make sense :)? Thanks!

You cannot pick 3 categories from different CTPs, unless you submit the listing more than once.
Each CTP has its own ADD LISTING form, and no categories of another CTP will be available on the form of another CTP.

It allows a listing to be added UP TO 3 categories in your example. If the user only chooses one category, that’s it, finished.
