OK – So I would lose everything from yesterday.

There will be a backup of existing site when you do Restore application. The back-up of existing site will be saved with name old-site.You can extract the desired table after restoring the application.Then it will give you option for for roleback the application. Once you roleback the application it will be again in the current state. At this point you can add the extracted table to your database.
Cloudways is suggesting to restore the backup from yesterday.
