I misspoke earlier, those are pre-defined fields included by default.
The way to ‘remove them’ is to set them to inactive.
Inside the field properties, set Is Active to No

The WooCommerce update failed and caused the 500 error.
The site is back now. It appears that reverting to the backup worked as the site is still running GDV1.

yes you should be able to add more than one instance of the video field, and be able to change the field key.
Please provide WP Admin and FTP credentials in a followup reply so we can take a look at the issue.
Several updates have been made to GDV2 and addons. Be sure you are running the latest versions. Let us know if the update has fixed the issue.

I have been informed by the developers that this is an issue of a mismatch in the versions of Fontawesome being used by UsersWP and GeoDirectory.
The issue will be fixed automatically by an upcoming update of GeoDirectory.
