If you don’t want Supreme to be updated, then don’t install the update.
If you want to make sure it won’t be updated, you can ‘fork’ it and rename the child theme.

You can set a default image for each CPT. For places, for example :
GD > Custom Post Types > Place > Advanced Mode > Upload default image
You can also upload a default listing image by CPT Category for each category at:
WP > Places > Place Categories > Category > Default listing image
So, let’s say you have a CPT for restaurant.
Go to WP > Restaurant Categories
For each category, add the Restaurant image as the default listing image.
That will work to make sure there is a default image for the listing.

You will need to create the menu, first.
Go to WP Menus, add a new menu, and add at least one custom link to it.
Then go to WP > Appearance > Widget and choose to add a custom menu widget to the footer area.
You will need to setup the widget to point to the menu you just added.

Can you clarify which page?
Do you mean you want to show ‘something’ on the Listing Preview page?
And make the display different, based on which CPT?That is not possible without a customization, but we will keep it in mind for GD V2.

Unfortunately, I can’t get into the dashboard or bring up the backend editor for a listing.
I see that the CPT filter is working.
SO far I can’t find an example though, though, where the custom field like ‘pet friendly’ has been checked. Can you provide one so we have a ‘positive’ result to shoot for?

I added a category description and it shows on the category listing page.
Places > Place Categories > Category > Description
I added an H2 and P. You can customize your own CSS to change the display.
Add custom CSS at GD > Design > Scripts > CSS
