for places, if you remove all listings and categories it won’t show on the frontend.
For additional questions, you can group ‘alike’ questions and make a couple of tickets. If you have found a technical bug those are good ones to put on their own in a single ticket.

Check to make sure you haven’t network activated GD. If you have, activate it only on the subsite.

You can also try the built in GD Import Export function. Use that to export your listings, make your change, then import again, selecting the option to update if the ID already exists.

You might be referring to the fact that GD Post Images will expand to the dimensions of the container in which it is placed. The appropriate image size will be loaded based on the container dimension automatically, but you should be able to specify it with that param.
That said, maybe you want to use Custom CSS to change the size of the visible image on the page?
For the slider something like:

It is not possible to change that. You can add another CPT for listings with no address, and then disable ‘physical location’ for the CPT in the CPT general settings.

You will need to unlock the category for the franchise listing, then, and set the franchise to an other/different category.
For GDV2 you could try creating a different Ninja Form.
