After more searching, I think I found my answer. The Prices and Payments add-on is called the “Geodir Payment Manager” in the list of downloads.

Maybe I missed some basic instructions on this that would have explained it and maybe some other things. Let me know if I missed some basic instructions.

And BTW great directory plugin, I’m really pleased with how it works and its integration with Genesis themes.
