Thank you very much for your response.
Let me explain in detail the steps to replicate the problem:
1) Go to “Roses Paellas” or “Roses Tapas” in the main menu. These are direct links to the tags “Roses Paellas” or “Roses Tapas Club” Archive pages in the main language CA.
2) Open any listing and see its GD Detail page.
3) Change language to ES, FR or EN from the main menu WPML language selector.
4) Click on the tag “Roses Paellas” or “Roses Tapas Club” in the sidebar.
5) The tag Archive page opens in CA, not in the language ES, FR or EN as it should have opened.

I read several times the documentation about builders but I am not yet getting it.
All what you said here about customizing the details I asked for, can be done with a builder without knowing and touching CSS?
I am a Divi user and I do not see how this could be possible unless GD elements would be Divi modules.
I did not want to use Divi in my site because I started the site with Divi years ago and then I decided to switch to Supreme Directory theme with Divi and finally to Supreme Directory standalone because I felt that Divi was slowing the site and giving many compatibility problems with GD V1. Also, I noticed that GD team was not really a Divi fan. :-). I also tried Beaver Builder but finally I was planning to switch to Elementor in a near future. In the meantime I also found Oxygen, which seems to be a very interesting concept, although not suitable for my limited technical knowdledge.
Anyway, I see that I have no other option but to try a builder as soon as possible, and I will do with Divi, which is the builder I have more experience with, using a clone of my GD V2 site as staging. I will do it as soon as I will have solved most if not all the many problems and details after the GD V1 to GD V2 conversion.

I have just found one way to get it:
1) Go to any listing.
2) Click to a tag.
3) Then “roses/” appears at the end of all GD detail pages as well as of all GD Archive page accessed from the main menu.
4) The only way to get rid of the “roses/” is to go back to the home page.But sometimes GD Archive pages are shown and sometimes Error 404 is shown instead. I have not been able to find any logic behind this.

I do not know what you have done, but I have checked at least 20 times and the problem seems to have partially disappeared.
That is, Language Selector now shows in all languages in Search page.
But:
1) Map shows in main language CA, but not in the other languages when switching language from the Search results page. Even switching back to CA from another language does not show the Map. The only way then to show the Map is to get back to the Home page and redo the search.
2) When Searching by Categories, that is selecting a Category from the dropdown field and clicking the Search button leads to the correct results in the main language CA, but then switching language shows all CPT listings instead.
3) When Searching by a keyword, that is, starting to type the keyword in the keyword field and then selecting one of the keywords appearing in the dropdown, leads to the correct results in the main language CA and switching the language keeps showing the correct results.
Just in case, I tried deactivating the Swift Performance cache and optimization plugin, with the same results.
