Different rating styles for CPT

I’m hoping to get some advice on setting up my rating system for my listings.

First off I have a directory of Beers (places) and breweries (CPT). I want to be able to have the capability to have a 5 star rating for breweries and a 10 star rating for beers.

#1. Is there a way to disable the overall rating so that i can create a custom rating for the overall rating by linking it to a rating style of my liking?

#2. For beers, typically the rating scales uses numbers from 1 through 10. How can i change the stars to numbers?

#3. Without the use of Buddypress is there a way to link rating activities to the users profile?
