That is because the html changes if you have only 1 option or more.

You can fix with this css:

    float: left;
    margin: 0 3px -3px;
    padding: 0;
}

.geodir_category_list_view .geodir_cuisines ul {
    display: inline-block;
    margin: 0;
}
