To CPT or not to CPT, that is the question!

Can I move all the listings in a category under say “places” into a new CPT?

I’m starting a new site called Vegan Linked. I “think” I want to eventually have

Food & Drink: Chinese, Mexican, Pizza, Bars & Nightlife, Delivery, Catering, etc…
Places: Animal Sanctuaries, Grocery Stores, Retail Stores, Breweries
Products: Beauty & Personal Care, Beverages, Clothing, Food, Home Products, Snacks, Vitamins, Wholesale
Services: Blogger, Doctor, Support Groups, Media

Am I thinking about this right, that these should be in four Custom Post Type Categories?

I am starting off small and I’m not sure how the site will grow. I assuming it may grow in this way. I would prefer to build it as people join. My approach is to create content for most of the listings at first because I am a content developer (videographer/photographer).

I don’t recall exactly what, but there was something about having listing in different CPT’s that bugged me when I tried this before. It was as if some things crossed over. Like a “Place” may also offer “Food & Drink” and even “Products” and “Services”. So listing may be difficult having to add multiple. It also seemed a little annoying as a visitor, but I don’t recall exactly why right off.

I’m thinking it may be better to just start off simple with the default post type “Places” having categories restaurants, sanctuaries, etc… If I do and then decide later to separate the restaurants into a CPT “Restaurants” can I move all the listings in the restaurant categories to a new CPT?
