Hello,
I am wondering if a user has the ability to set the publish status of their listing. For instance, I have a user who makes a listing and just when they are about to finish, realize they have to gather a little more information before publishing.

Can they save the listing and then come back later and publish the listing or, must they publish it immediately and then edit the listing at a later time?

Ideally a user can set their listing into a “suspend” or “draft” mode at anytime.

Users can not temporary save a listing.
Once a listing is added they can delete it, from the dashboard, so it will disappear from the frontend.
Depending on your settings at
GD > General > User deleted posts go to trash
the listing will go to the trash so you can restore for them, or it will get permanently deleted.

Thank you for the explanation.

How difficult would it be to make it so that the listing owner can temporarily take their listing offline, and come back to publish it at a later date?

that would require extra functionalities that are quite complex to add.
