    What process can i use to change the default Places category to shops instead?

    You need the custom types addon.
    WP admin > GD > Custom Post types > click on edit of the Places post type > change anything you like BUT NOT THE POST TYPE ITSELF – THIS WILL BREAK YOUR SITE (I think this is no longer possible anyway, but don’t even try!)
