Hi,
V2 works differently and takes some getting used to because there are so many opportunities for personalizing it, like the ability you have to control whether the icon, icon and label, or just the value is shown in the sidebar without CSS. That was not possible in GDV1 without custom CSS and the features go much further than that. This is but one option for one of the 30+ design elements.
You can review the introduction here where you can find links to all the major new features and information about how they work and how to configure them:

On this page you can find a description of how the details page is normally setup:

In your case, since you want to personalize it, using the GD Output Location element in the sidebar is not the best match.
For each field you will want to show only the icon, then it needs to be added with GD Post Meta.
I have added 2 as an example so you can see how it is done. See the screenshot below to know what to look for on the widget settings page:
WP Backend – Appearance – Widgets
The next step is to remove the display from GD Output Location. So, for example, if you are displaying the title with GD Output Location, then go to the Title Custom Field and visit the settings for the Title field
Places – Settings – Custom Fields – Titles – Show in extra output locations – Remove “Details page sidebar”
Add a new post meta widget for each item where you want to show the icon and value only.
