Hello,

some of our places have text in the manual excerpt. In the listview of the categories is an excerpt displayed, either the manual excerpt or an automatic generated excerpt.
How can I prevent wordpress from using the manual excerpt? We want to show only the automatic excerpt.

You can’t adding the excerpt manually you esplicitly tell wordpress to use your custom excerpt. That’s what that field is there for.
