Hi, Fairly detailed question about how to se tup. Attached pdf file has details re what I’m trying to build and questions as to how to set it up… i.e. with multiple CPTs or ???

Minimising CPTs will make admin easier and will also be easier for your users and visitors. In my personal opinion, you should use categories where possible and only have extra custom post types if you have a reason for it (like different pricing, different custom fields).
