Usually people use Tags for arbitrary groupings like that. Tags and categories are the only items that will automatically create pages.
Did you save the listing first to the new package?
It is not possible to hide packages with an option, but you can do it with your own custom CSS

If a plugin causes a problem, you can always rename or delete the folder via FTP.
GD uses the wplogin, you can find that at /wp-login.php
4. The shortcode was not correct. I used a shortcode builder to recreate it and saved and it worked.
5. No, this is about th elayout of your page. WP Bakery has some options to do this but you would find more with Elementor or Beaver Builder. I have set it to a carousel. Adjust it further by editing the post images shortcode on your GD Details template.
