Yes, that is possible. It all depends what you want to achieve.
For example, the layout for listings themselves on the Listings/category page is determined at the custom fields level.Add this CSS:

To allow sub-categories you would need to allow at least 2 categories. Categories are categories, regardless whether that category is a parent or a child category.
I thought you meant predefined for your users, so that is why I gave the link to how to create custom fields.
TO create your own “predefined” custom fields, you would need to customize the code.All your custom fields are on the right hand side.
I am not sure why that “Custom fields” box is there on the left. That is new and might be ready for future development. I’ll get the developers to explain for you.
