On the map options widget if you choose “Show advanced” and choose map type directory map you can find a category filter or post type selector.

In GDv2, you can edit the details listing page https://wpgeodirectory.com/docs-v2/geodirectory/page-design/ and display the listing ratings using shortcode https://wpgeodirectory.com/docs-v2/geodirectory/design-elements/#gd_post_rating . Then, you can possibly try using a page builder to hide/show certain shortcodes on desktop/mobile.
