I am already able to do that. The issue I have is that my site is quite low traffic, and the listing owners are not SEO wizards who care about finding meaningful statistics. They do not want to know about “this year vs. last year”.
I’m therefore looking for a really basic “vanity metric” to make the listing owners feel that this site is worth it for them. They just want to know that their listing is getting viewers, and that’s why I would like a “total pageviews for all time” to be visible by default.

I guess that using a Capthca would at least slow the human down, and make them less likely to bother.

I don’t feel 100% safe using it though. Years down the line, an update could for some reason change the order of the rows, and it could end up hiding an essential field which completely breaks the function of this form.

At the moment I can’t even find a way to ask business owners not to put a URL in the description box. This particular field doesn’t appear to have a ‘description/instructions’ field which I can translate and customise : (
If that’s not clear, the way I customsed the following text “Tags are short keywords, with no space within.(eg: tag1, tag2, tag3) Up to 40 characters only.” was to translate it. But I can’t see a field to work with for the business description box.
