Accessing Custom Field via Functions.php

We created a custom field that takes NUMBER values, and we’re planning to use it to record the number of times a listing has been visited. That means we’ll have to hook into any action within a listing page, and increment the value of the corresponding custom field. My question is, how do we update the custom field value?
