Good Afternoon!

I am looking to organize posts on my homepage in a grid format and by category, for example, an image in the grid will have the text “travel logistics” and when the reader clicks it it will take them to all blogs with the category “travel logistics” selected. I would have around 8 different categories.

Also, is there a way that I can easily disable the blog from showing the date? And the author?

That depends on the theme you are using.
There are also a few plugins that will assist with that:

https://wordpress.org/plugins/recent-posts-widget-extended/
etc

Another option is to create a new GD Custom Post Type. Then you will have total control like any other CPT.

Can I just use an image and link that to a page that would list all articles of a certain category? Is there some sort of shortcode for that?

I am using a theme called Traveller by the way, with the GD framework.

GD Shortcodes only work for GD Custom Post types. For posts with your theme, the theme may have some widgets, but you would need to refer to your theme and the documentation to find out more. As Guust said there are also other plugins you can use for that sort of feature.
