customize add listing page for custom post type

I have several custom post types. One of which is for “people”. I need to customize the add listing form for this custom post type.

LABELS
I need to change the word “title” for the first field label to “name”. I want to change the second field label from “description” to “story”. I want to change “tag keywords” to “interest keywords”. But I can’t find where I may change the labels of these first three fields. I can most if not all the others I need to change though.

REMOVE SOCIAL IMPORTER FROM CUSTOM POST TYPE
I also have the social importer installed. I use it for all the custom post types accept the person one. Because a person has a profile instead of a page the importer doesn’t seem to work. When I try to use the importer using a profile url a pop up says “something went wrong(803)”. So, if I cannot use the importer for profiles then I need to remove that field from the add listing for this custom post type. How can i do that?

I also have the claim listing plugin active. I use it for all custom post types accept the person one. Is there a way to not show that on the add listing page? So, basically I need to disable the claim listing for this one custom post type, how can I?

NO CATEGORIES
Lastly, I may only need the custom post type and not any categories. I see where in the custom post type settings I can make this field not active. Is it ok to not have any categories for a custom post type? I’m assuming it is because so far it doesn’t seem to create any problems and there’s an option to make it not active. Nonehteless, there isn’t a default option in the Category field of a custom post type. Is there a way to force a default category on the add listing page?
