Displaying a Select custom field only when the user chooses an option value

Hi support
I would like to display a Select custom field (not mandatory) only if the user really chose an option value different from the first available in the field.
At the moment if the user doesn’t choose an option value the field is displayed with the first one.

i.e. a Custom field has three option values: Select, Yes, No.
If the user chooses Yes or No the field is displayed.
If the user chooses Select or he doesn’t choose anything when Select is selected then the field is not displayed.
NOTE: in this way the field can be “disabled” afterward if the condition has changed.

Is it possible?
