    Is it possible to link/couple categories from different post types with each other?
    Or can a category by a parent of a child category in GD?

    For instance you have this hotel defined in “Places”: France > Rhone-Alpes > Bedoin > Chalet Reynard. So this hotel is situated in the city of Bedoin.

    Can you link this hotel with a custom post type “Routes” so that all routes from Bedoin are displayed on the map when you view this hotel’s information?

    That is not possible, CPTs are completely separated.
    But you can show all CPTs on the Bedoin location page.
