I’ve noticed the Schema Type options on the Category add/edit page but I can’t find any documentation and nothing comes up on a forum search – what does it do and where? It seems to reflect what I have been doing in naming categories for different CPTs.

It basically tells the search engine crawling it what to expect, you can read a bit more about it here: http://www.vervesearch.com/blog/a-guide-to-rich-snippets-schema-and-microdata/

    Thanks,

    Thanks Stiofan,

I’ve had a look – and at some other stuff I found – it looks a bit technical for me … would I be OK, for example, just setting the schema type to BedandBreakfast for a category for Bed and Breakfasts within a CPT for accommodation? is it that simple? Or should I beware of unforeseen implications of doing so?

If in doubt just leave it as standard but yes if the category is bead and breakfast that would be a good selection for it 🙂
