GD has a lot of options, it’s true. Most other plugins don’t come with a complete system for custom fields, templates, and UX, so, the number of configuration options for GD can be a little overwhelming. That’s why the setup wizard will get you a working setup with a couple button clicks.
Once you have the site setup, you should make a choice about how you will edit templates.
Most people use the tabs.

In that screen, click the field you want and it shows up in the tabs. No shortcodes needed.
If you want to use shortcodes, you can use them in the tabs, too. There is a shortcode field there to use.
You can also edit the template directly. That is the GD Details template that controls how the listing pages work.
I recommend you use the classic editor with the shortcode builder. This page describes how to set those up.

Once you have that in place, you can use the shortcode builder to access configuration options for all the GD shortcodes.
You might use GD Post Meta to display fields.
