By ‘defaults to draft’ do you mean after the listing is paid for and the order completed, that the listing is set to draft?
CPT settings should override default settings for publish status.
What cart are you using? Is the order marked complete?
Please attach your GD Site status report.
Also include WP Admin if we need to check the settings.

Each CPT can have its own Detail, Archuve, and Archive item template pages.
The defaults are set at
GD, Settings, General, Pages
CPT overrides are set in the CPT Settings
CPT, Settings, General, Advanced
These are the easiest templates to edit, and determine the actual page display. You can add HTML and markup as needed, even use a builder for layout.
If you want to make changes to styles you can use the theme styles or write your own. The shortcode builder has a lot of options. You can also use shortcodes in HTML widgets for the sidebars, or remove the tabs display completely and just use shortcodes for even more control.
All GDV2 widgets have built in logic options to allow targeting to GD pages.
Then widget logic can be used for non-GD widgets. We use it on our own sites and when we do testing. It is a simple plugin that uses logic built into WP, it is free, and we have been recommending it for some time.
I have used many sidebar manager plugins and I do not feel they are an appropriate solution for page-template/sidebar/widget management for V2. I have not seen one yet that I can really recommend and even if they work (always only partially) I think it is more reasonable to use widget logic or create a few additional page templates for a theme than deal with the headaches of plugin derived sidebar behavior.

The information comes from the API. If you change it the next person will get the result from the API again and so it goes.

Map Icons should be max 48*38 usually.
When someone adds a listing, it is where the map starts out.
