Which fields are you trying to hide?
You can use custom CSS to hide most of them.
Some members have used JS or snippets to set a category.
There are no other settings to achieve what you are looking for at this time.
If it is a widget, then you can adjust the marker cluster setting at GD – Design – Marker Cluster by ensuring the widget is set there.
If you have it installed, then visit the settings and select “Allow multicity”

do you have the Location Manager installed?
You will need the Location Manager to add listings with locations outside the default location.
The GD plugin and the API both do not distinguish between home and business addresses.
It might be wise to wait for GDv2, but some of the logic used to control post output is WP, not GD, and some overrides have been shared here: https://wpgeodirectory.com/docs/faqs/what-are-some-examples-of-changes-that-a-developer-can-make-to-the-listings-page/

2. Popular categories widget doesn’t have a sort order at this time. It is possible to code a similar list with HTML and to choose the order that way.
3. The only way to select default category is with the “ajax chained” field UI.

For V2, we are testing on core now, and the addons will come as soon as core is stable.

just a note here that GD is not designed to treat “Locations” as “Listings”, and widgets and shortcodes are designed to work for listings, not locations.
I wonder if it might not behoove you to look at how the “Location Description” features work, to consider “joining” that to a listing so you could use listing related features ‘tied in’ to the location system. Perhaps a listing ID for a particular CPT, a listing for each location, for example.
Then it would be possible to use the CPT system and widgets for dealing with “Locations as Listings”.
