Something like that could be done with a builder.
Not without a customization.
That would require a customization but let me flag your idea for the developers who can add a comment if there is a workaround.

Turn off autocomplete in the Search options.
No, selecting a category will show or hide the category on the map.
Open the advanced options, choose your event post type, and you should see the options once you have chosen it.

Search results are always ordered by relevance and GD does not have sort options for them.
Sort options apply to archive pages.

GDV2 will be out momentarily, have you tried installing that?
For GDV1 it would require a customization.

This is not an issue with GDV2.
We can take a look at your GDV1 site, but, when are you planning to upgrade?
