You will need the Location Manager addon to add listings outside the default location.
WP tags and GD tags are different, and the listings won’t cross over.

Backend – GeoDirectory – Status – Tools and run the tool to create the GeoDirectory pages.

It is possible to ‘create a shortcode to ahow just the places that match a specific value’ using tags or categories, but not custom fields.
Use the “Filter by tags” or select individual categories in the advanced options:

You will need to use Beaver Themer to setup new layouts for the GD Details, Archive, and Search Archive. Once you setup the layouts, edit them to insert the templates.

The GD Settings for pages and templates should all be set to WP Pages, except the BB option which can be used to select a search archive layout.

It sounds like you just downloaded the sample instead of adding a listing and then exporting.
What do you mean by ‘example’? The same CSV?
If you export, it should have columns to match every field, you should not need to add any columns to it.
