To rephrase, WooCommerce does not automatically mark orders complete. However, GD waits for an order to be marked complete before changing the status of the listing to the “Paid Status”.
You will have to inquire about additional options from WC to change that behavior, or deal with the default requirement to mark orders complete by clicking a button.

You can use the option to “Display as List” in GD, Design, Detail.
But that option will render the detail page as a list in desktop and mobile. We don’t have a solution for doing it on just mobile, so it would be a customization.

That should be removed in the next version of GDV2. It is the old GD addon, as far as I know, and has been superceded by the WPI Addon.
Usually a membership management plugin of some kind is needed for that, for GDV1 at least.
GDV2 has a feature to exclude roles from the WP Backend/Dashboard. You could then use it to exclude all but some roles, thereby granting those roles the ability to add listings from the backend. That feature won’t help you control access to the add-listing page on the frontend, though. For that you would need some kind of membership plugin, again.I can confirm that the Title field cannot be locked in V2.
