You can have grid display on archive pages, but you cannot add any other content than the numbers to the grid display of a GD calendar.

How do I (1) get the categories to populate

you only have listings in the agents category: …/wp-admin/edit-tags.php?taxonomy=gd_placecategory&post_type=gd_place
How are you uploading listings into categories?

(2) get the icon to appear on the front page?

That will automatically happen when you have listings in the categories.

1) Documentation mentions that Search results are sorted by “relevance”. Would it be possible to know which factors are “relevant” for such “relevance” and how relevant each one is: Featured, Reviews, Distance (I understand that only when “Near” field of the search form has been set), Description lenght, Tags, Categories?

Search results are sorted with relevance to what the visitor is searching for.
Title, description, tags and categories are searched, and location is also considered.
Featured, reviews and custom fields are not relevant.

2) The terminology is confusing for me. Are search pages also archive pages? A listing page is the same than an archive page? A listing page is a list of listings?

Archive pages are the CPT and category pages.
The results of a search by a visitor are presented on the Search page.
Sometimes archive pages are referred to as Listings pages, note plural.
A listing page, singular, is referred to as a Detail page.

You can only search within one CPT at the same time, so search results are always only from one CPT.

There are no sorting options on the search page, only on archive pages.

If you already have featured first as default, then you cannot add them again later, that would not make sense. If all featured ones are first, then there are none left …

You cannot add shortcodes to a custom field that users can edit, that would be a major security risk, so that is not possible by default with WordPress.
