where do I change the name of ‘listings’ and ‘add listing’ in the main menu?
That is done with the language files,

or you can add the links manually at Appearance > MenusThanks
Add your locations at GD > Multilocations > Add/edit locations tab.
Then go to GD > Multilocations > Location Settings tab > City > Enable Selected CityThanks
You can turn off your Buddypress settings that allow interaction with other users, or posting any information.
Buddypress is for user registration, GD is for listing submission.If you want to control Buddypress actions, you might be able to do that with a membership plugin.

Every listing needs to be in at least one category, or the links will not work.

On mobile, the location switcher only works by entering in a few letter to start searching for a location.
