You shouldn’t arrange the fields on a libreoffice file, you should use our sample file.
Or add 1 listing via backend and export it. That will give you the custom fields too if you created them.

If you use the gallery, archives will by default show the 1st image uploaded. Images can be reordered with drag and drop.
If you are using a logo field, you need to edit the archive item template page and add the custom field instead of the shortcode for the gallery.

I’m not sure I understand what you mean. Have you uploaded a logo? Did you upload it as a custom field or a regular image of the gallery?

1) Custom JS would be required.
2) No, the system is not aware of which field is associated with which city. This would require complex customization. GeoDirectory currently doesn’t provide conditional fields.
3) with css:

That’s no longer an option and would be considered a customization. However there are plenty of plugins offering similar things.
