there is no way to hide that text, but you can make it white and hide it that way with css:

You can do tghat by adding this to GeoDirectory >> Design >> Scripts >> Custom CSS:

.geodir_wsh, .geodir_yc, .geodir_ewp {
    color: #fff;
}

.geodir-i-checkbox {
    color: #777;
}

the only solution would be using only 1 CPT and multiple categories.

But in that case you will have equal custom fields for all categories.

it can’t be network activated becaue it has not be designed to work as network activated.

If you now network deactivate it and activate it on the website where you are working on, it will start to work as it should.
