Sorting should work fine on category pages, and on search pages there should be no sort options, sorting is done by search criteria.

Yeah for some reason with the new versions of PHP they set warnings and notices to show by default instead of only errors link in older versions, it should only be like this in a dev site, anyway to hide them just add this one line to yout child theme functions.php file.

U must have been on a really old version? Please check now?

P.S. Sunday is not the best day to do updates on a live site, u should alway s try to do updates on a dev site, we don’t usually provide support on a Sunday but i seen it was a live site.
