Maybe the free trial settings in the Pricing and Payments section is what you are looking for.
When configuring the pricing options for a package, there is an option for a free trial.

you should test the plugin on a clone of your site to become familiar with the interface and to test it with your theme, then make a list of the features that would need to be developed and write in to ask about them.
Once the plugin is ready for production sites it will be released on wordpress.org
You can take a look at the Ninja Forms integration and try it yourself on the test site to get an idea of how a booking plugin would work.

If a user renews a job listing with 10 days to go (for example) the renewed listing is reset to 30 days. This means that in total they’ve lost 10 days on the listing.Is there a way to set it so that renewing the listing adds 30 days onto the previous expiry date, so that no time is lost?
