What is it that you want to change, exactly?

if you delete all places and place categories then the ‘Places’ won’t show up in the select list.

there is just the one text placeholder available, it is not dynamic.
The placeholder can be changed at:
GeoDirectory – Design – Search
You can disable the plugin to hide the field.
You might also be using it for Yelp imports, though, but if you aren’t then just disable it until you are ready to submit for review.

that is a good idea, but the widget doesn’t have that feature at this time. To find a page with a certain CPT in a certain category, an filter further by special offers, that is only possible with search.
The widget feature is mean to give site owners an opportunity to provide an incentive of widget exposure for listing owners that create special offers by allowing site managers to give them the exposure in the widget.
It is possible to hide the ‘view all’ link with CSS.
Going further, Special offers can be exposed to advanced search. A search for the particular CPT, and filtered by special offers would then give you a URL that you could place in the sidebar with a button like ‘View all Special Offers from ____”.
