The stings you reference are included in the GeoDirectory Core plugin, and you may find additional strings that you want to translate within the theme or addons.

Yes, you can control the word count for the Listing page with a setting. You can find the setting at:
GeoDirectory > Design > Listings > Description word limit

currently that is not possible without customization.
In theory there is no difference between one sidebar and another sidebar, regardless of which theme or plugin is creating it.
We may be able to provide some advice if you tell us more about what you are trying to achieve.
Is there some specific problem you are trying to overcome with the GD sidebar?

Only site admins and the listing owner are able to edit the listings, these are the options that are included with GeoDirectory.
Some members have tried other 3rd party plugins to accomplish something similar, but we cannot recommend them because we don’t provide support for them.
