I have experienced this, also.
For a little background, Google may have any number of address listings for a given place. Google has a number of factors to consider when an API call is made, and the place listing is not necessarily the same as what you see through the maps.google.com application. In fact it is definitely different, even if the address info is the same.
So, all that being said, address can be made totally optional and you can simply correct the pin location or the address itself, once you have things in the right general area. That’s the ‘fix’ as it were. The GD plugins won’t go and automatically re-geocode your data.
All that being said, we are happy to work with you to improve the accuracy for your particular area.

I think there are several ways to go about this.
First of all you might want to use widgets and shortcodes.

As far as choosing the starting page, it is very important to set it because that is how the rest of the links for the directory know where to begin.
At GD > Permalinks > select the Location page for the Directory start page.

You might could remove the map, and then place a widget where you want the map.

Here is some CSS to remove the map:
.map-places-listing {display: none} .trigger {display: none;} .triggermap {display: none;}
If those don’t work for you, there are many other example of moving and removing items throughout the forum. In more advanced cases you may need some PHP.

You can drag and drop to change the order, or remove the fields from a location and add them back in the order desired.

If I understand you correctly, when you say “no image shows up in an image-less listing” you mean the image is not showing up as expected in the Soliloquy slideshow, which is a different plugin, yes?
You might want to try a different plugin to accomplish this, to set the featured image for the listing in a different way. Here’s something: https://wordpress.org/plugins/default-featured-image/
