Hello,
GD has options for exporting many things but it does not have an option for export of CPT settings (fields, tabs, sorting).
If you want those the best way is to duplicate the site.

Yes, GD Map has options to filter by categories. To adjust the options, either edit the widget options or use the shortcode builder. In either case use the blue button to reveal all the advanced options including filters.

The Search for field you have exposed is only for searching title/description/categories/tags. If the word colorado is not in one of those fields then the listing will not be returned in the search results.
If you want to search NEAR for cities and states then turn the Near search field back on by removing the custom CSS that has hidden the field.
