In that particular Elementor widget it would appear you do not have the option for making a custom connection to post custom fields except those that are already declared. That is a potential integration that we will look at for future versions.
For now you would need to create a customization to make a custom function to retrieve the value and another to make it available to that Elementor widget.
We do not offer that level of integration with builders at this time, but we are looking at it for a future addon.
I will flag your question for the developers in case they are aware of a workaround.

The GD solution for adding product links is to give the visitor a URL field where they can place a link to the product. The description field is for text or basic markup, and shortcodes and other complex code are disabled specifically to prevent site users from breaking the site with malicious or poorly formed code.
Kor is pointing out that you do have an example of how to make it work on hand, so I am not sure what it is you are asking us for. Is there some particular Amazon code that you would like to support on your site? If so, paste it here and we can try to point you in the right direction.
GD uses a simplified editor for listings because, just as GD doesn’t allow access to the media library, neither does it allow listing owners to use shortcodes or setup maps or other block in the listing description area. Any field that has shortcodes enabled should be admin only so end users do not have access.

GDV1 can only show one linked post type at a time, and events are the higher priority.

You can try adjusting permalinks, making them more complex. Make sure you are running the latest V2, a new change makes the category base required.
The gd_listings shortcode has at least one bad param. Try recreating it. If there are issues with permalinks they will cause links to listings to go 404.

The developers are considering how best to go about this, and a task has been created to look at how to implement it. Until that happens this is a customization that can only be achieved with custom code. We will make an update here as soon as we have one.

You can manually change the region name, but new requests to the API will result in the original value, and so new listing locations would need to be regularly merged into the custom locations.
