Are you asking how to prevent users adding their listing to multiple categories? That is done by limiting the price packages.
If you are asking how you can prevent users from having to choose a default category (which they all can do, so they all can standout more, so I do not see the issue), I’ll get Paolo to have a look at your question too, but I think that is standard WP behavior.
On the location map, it will always show the pin of the default category.
An owner gets an email when a review is posted for their listing, but not a notification in the BP dashboard. I am not sure if it is a simple change or not, so I will ask the developers for you.

Add the “CPT categories” widget to a “GD Listings” section, and leave “Don’t filter for current viewing post type” and “Don’t filter for current viewing category” UN-ticked.
Let us know how that went.

2. Visitors can use the “send to a friend” link for that from the listing’s detail page.
Yes, that is normal. You asked to “delete” the version numbers, and that is what it does.

Go to “Appearance > menus” and make sure to tick “Place Categories” in “screen options”.

You have enabled comments AFTER adding the listings, so comments can only be made for new listings going forward, or by doing a bulk edit. Basically the reverse of what is described at https://wpgeodirectory.com/docs/faqs/how-do-i-disable-reviews/
I also disabled the “Show a ‘follow comments’” option in the comment form at Settings > Discussion for the Jetpack settings.
